Other Pros: Self-adjusting as brake pads wear. I've pretty much never have to touch them once setup properly (i.e. once centered). Reasonable pad clearance (at least when you've got relatively true rotors -- all best are off once things get bent up).
Cons: Dealing with hydraulic lines is definitely a bit more work. And it can take a couple of tries to really bleed them well. You also need to be *very* wary of touching the levers even a tiny amount when the wheel is removed or you will find your calipers "self-adjusted" such that you no longer have any clearance for your calipers! But those are the hazards of dealing with all hydraulic disc brakes.
I think these are great for a gravel grinder or cross bike. I don't think that I'd bother with disc brakes on a fair-weather race bike, however. I don't know that the weight gain (~1 lbs total for wheels, discs, calipers, and frame/fork design) justifies the performance increase on a fair weather, light-weight racing bike.
Overall: It's hard to go back to bikes with mechanic disk brakes or ordinary rim brakes after riding my RS785 equipped bike a lot. Really nice product. That said, plain old rim brakes are definitely easier to work on and adjust (in my opinion).
