I have used multi release cleats for many years. Getting out of the pedals in a pinch is much easier than with single release. Occasional accidental releases happen, but careful adjustment of the release tension minimizes this. Last time I used single relase on my pedals I fell trying to get out... the appropriate tension is very different.

I broke my left ankle 15 years ago and clipping out with me left has always been a chore, especially when I'm going down. I don't rotate my left heel outward very easily, and it tends to supinate as well. Now, I can exit easily on that side.
The only drawback is that, if the pedal is adjusted too loosely, I can pull out when out of the saddle.
The Shimano MTB pedals aren't as easy to clip into as the egg beaters, but I just couldn't get out of the left pedal with the egg beater (or the Shimano black cleat.)

This is one of the best cleat out there for mtb shoes. very easy to clip on and can unclick by either side (left or right twist of the leg). I have been using mine for over two years now and is still running. I recently bought a second one for my son to use with his road bike.

Great cleats. I've been hitting all kinds of stuff with these and they never come out of the pedal when I don't want them to. Also they are easy to get in and out of and easy installation.

This is the fastest way to build your confidence when riding clipless. Clips in easy and dis-engages in multiple direction if need to bail if the need arises.
This is installed in all my riding shoes.

I strongly prefer these over the SM-51s for trail and AM riding. The 51s are still great for road or XC but the 56s release much better which I find to be key in AM riding. If I had to chose between 51s and flats for AM I would go with the flats, you just can't release as quickly or as easily as is needed in many situations. I now ride with the 56s over my pinned flats in AM though.
